Scorch, ie overheating in grinding or glazing of martensitic stainless steels can lead to serious levels of complaint from corrosion of blades in service. These overheated areas become noticeably pitted after anything from several days to several months’ use, depending mainly upon the service conditions of the knives.
Any manufacturers who comply with, or intend to comply with the proposed European/International Standards for table cutlery and knives for food preparation will need to ensure that their products are free from overheating, thereby giving corrosion free performance.
Scorch can be caused by machine grinding, double head glazing, hand grinding or glazing of bolster backs, blade backs, necks and edge serrating. Hitherto, it has been necessary to either carry out a full corrosion test which takes 6 hours and is destructive, or an acid etch test taking about 30 minutes, in order to identify areas of overheating.
CATRA has now developed an electronic technique that can identify these areas of overheating or areas of inconsistency of heat treatment, which takes about 10 seconds per blade. The equipment is easy to use and takes only a few seconds to train personnel in its use and interpretation. The basic hand held scanner, as shown in the photograph above, comes complete with 4mm probe. This is used to simply draw the probe in contact with the surface across the blade. By the use of this technique, the detection of overheated areas can be quickly achieved and allow adjustment of grinding machine/processes to remove this phenomena.
Accurately calibrated martensitic blade samples are fixed to the front of the instrument to allow easy calibration. Full instructions and operating manual are supplied along with a protective carrying case.
